I 100% guarantee that I will order veggie fajitas if I get dinner at a Mexican restaurant. There’s something about roasted peppers and mushrooms that taste so delicious wrapped in a warm fajita and the right toppings. I had been really craving fajitas recently but decided to make them at home instead of going out. These were so good and the ingredients were much cheaper than eating out too!
Ingredient details:
- Peppers – I used red bell pepper, but any color would do.
- Mushrooms – I really like baby portabella mushrooms. They cook easily and taste great, and they’re also easy to find at any grocery store.
- Beans – I used canned black beans.
- Onion – I used red onion, but any kind will do. I just liked the flavor of red onion with the other veggies and spices.
- Jalapeños (optional) – I chopped one and mixed it with the black beans for extra flavor.
- Avocados – Slice these and pot them on top or mix with lime, salt, and cilantro for a quick guacamole.
- Seasonings: cumin, tajin, chili powder, paprika, salt.
- Toppings: Vegan sour cream, vegan cheese, chopped cilantro.
- Tortillas – I just used Mission Bell’s fajita-sized tortillas. You can wrap them in tin foil and keep them warm in the oven until the veggies are ready.

Ingredients:
1 red pepper
15oz black beans
1 red onion
10oz baby portabello mushrooms
1 jalapeño (optional)
1tbsp cumin
1tsp chili powder
1tsp tajin
1/2 tsp paprika
1/2 tsp salt
2 avocadoes
vegan sour cream
vegan cheese
1 bunch cilantro
fajita tortillas
Instructions:
- Preheat oven to 450°
- Slice mushrooms, onion, jalapeño, and red pepper.
- Drain black beans.
- Spread vegetables over the sheet pan and mix in seasonings evenly on top, mixing gently to coat all the veggies evenly. Mix slices of jalapeño pieces with the black beans.
- Bake at 450° for 15-20 minutes or until crispy.
- Slice the avocados or make them into guacamole with extra lime and cilantro.
- Remove veggies from the oven and assemble on tortillas with toppings.
- Serve and enjoy!
