Ok, so I’ve mentioned before that I lived in Lynchburg for a while. Honestly, a very strange town of new, college kid restaurants and then total dives from before Liberty took over the place. Well, there was this terrifying diner called the Texas Inn and they had these burgers called Cheesy Westerns that were literally SO unfathomably greasy but still super delicious. I remember Justin and I grabbed some when we lived a 10-minute walk from the diner and we walked home with our food and literally, the grease leaked through the bag before we got home and our bag broke Kevin McCallister style. Still ate the burger and it still tasted great by made me sick. Am I selling you? It was honestly such a classic experience. However, it’s next to impossible to make anything that disgustingly greasy with vegan ingredients. The burger I made basically has all the same incredible flavors but without the instant heart problems. It’s so nostalgic and delicious and will just blow your mind. Give it a try, please! It’s so worth it!

Ingredient details:

  • Black beans – I used Kroger brand canned black beans.
  • Rice – I used medium-grain white rice. Most kinds of rice will work though. I’m curious to check out the flavor and texture of wild rice.
  • Walnuts – I just used halved walnuts. Whatever kind you find is the cheapest since you’ll be pulsing them in a processor.
  • Garlic – I love minced garlic and it adds a good flavor to this hamburger patty.
  • Onion – I used a yellow onion. White would be too strong and red would look funny once caramelized. I love how easily you can caramelize yellow onions.
  • Starch – I used corn starch but you can also use potato starch or arrowroot. Something to firm up the outside of the burger and make it all stick together better.
  • Bread crumbs – I honestly switched to crushed-up Rice Crispies years ago. You can use panko bread crumbs if you prefer, but I find the Rice Crispies to be a super cheap and easy way to do breadcrumbs.
  • Olive oil – This is just for the pan before you cook the patties.
  • Cheese slices – I used ciao cheese, but I also love the Whole Foods brand of ghouda.
  • Just Egg – Use the whole container of Just Egg. There should be plenty for 4-5 burgers.
  • Buns – I used Dave’s Killer Burger Buns.

Recipe List

Ingredients:

1 can of black beans

1/4 cup uncooked rice

1/4 cup walnuts

5 cloves garlic

1 yellow onion

1/4 cup corn starch or potato starch

1/2 cup bread crumbs

1 tbsp olive oil

4-5 slices of vegan cheese

12oz Just Egg

4-5 hamburger buns

Instructions:

  1. Preheat oven to 400°
  2. Cook rice until ready.
  3. Spread drained black beans over a baking pan and bake at 400° for 15 minutes.
  4. Dice onion and mince garlic
  5. In a frying pan, cook onion on medium heat until caramelized (about 10 minutes).
  6. Set half of the onion aside and put the rest in a food processor.
  7. Add rice, beans, walnuts, and garlic to the food processor. Pulse until ingredients are chopped completely but not totally pureed.
  8. Form mixture into patties. It should make 4 large burgers or 5 medium burgers (depending on your preference of thickness and how many you want to serve).
  9. Coat each side in the starch and cook on a frying pan on medium-high for 4-5 minutes on each side.
  10. During the last 2 minutes of cooking, add the cheese slices and cover the pan so that the steam can melt the cheese.
  11. Cook just egg until fully done.
  12. Assemble burger with bun, patty, just egg, and caramelized onion on top. Add any toppings or eat as is for the full flavor effect.
  13. Enjoy!!!
