I know I’ve made a variation of this before, but this one is with link sausage and has sweet potatoes instead of golden potatoes and it was SO savory and the perfect comfort food for breakfast or breakfast-for-dinner.
Ingredient details:
- Sweet potatoes – I used two large sweet potatoes, unpeeled, and cubed them into small pieces.
- Beyond Sausage links – A couple of other plant-based brands have links, but I really like Beyond’s.
- Red and orange pepper – You can do any color you want, but I love the flavor and color combination of these two.
- Yellow onion – A mild onion flavor and it caramelizes really well.
- Seasonings – I used chili powder, cumin, salt, and paprika.
- Neutral oil – I used olive oil.

Ingredients:
2 large sweet potatoes
8oz Beyond Sausage links
1 red pepper
1 orange pepper
1 yellow onion
1tsp chili powder
1 tbsp cumin
1 tsp salt
1/2 tsp paprika
1 tbsp olive oil
Instructions:
- Dice onion and cook in a large frying pan on medium heat until caramelized.
- Dice sweet potato and add to the pan. Cook until crispy on each side.
- In a separate pan, cook beyond sausage links. Once crispy, cut into small medallions and continue to heat on low until sweet potatoes are ready.
- Dice peppers and add to pan with sweet potatoes. Add in sausages and seasonings as well.
- Heat together for 3-5 minutes and then serve!
