There are a million salad recipes out there and so many different ways to make a salad. However, this recipe was so delicious and simple. Really the main work is just roasting chickpeas and then mixing the dressing. I love this for an easy dinner that doesn’t take too much time or ingredients, but still has lots of flavor.

Ingredient details:

  • Greens – I am on a huge arugula kick right now. This would also work with any other leafy green, but I really love arugula and it tastes great in this salad.
  • Chickpeas – I just used two cans of chickpeas. They will be pan fried.
  • Dressing – This dressing is made with tahini, oatmilk, dijon, and lots of seasonings and other flavors. It’s so good! I have played around a lot with different ways to make caesar dressing, and this one is a favorite.
  • Vegan Cheese – I used So Delicious mozzarella cheese and Follow Your Heart permesan to add some cheesy goodness to this salad.

Recipe List

Ingredients:

5oz arugula

30oz chickpeas (2 cans)

1tbsp olive oil

Dressing:

1/4 cup tahini

1/4 cup oatmilk

1 fresh lemon

1 tsp apple cider vinegar

2 cloves minced garlic

2tsp dijon mustard

1 tsp maple syrup

1/8tsp salt

1/2 tsp pepper

Optional: vegan cheese

Instructions:

  1. In large frying pan, heat olive oil on medium heat until hot. Add chickpeas once hot and cook on medium until crispy.
  2. In mixing bowl, add all ingredients for dressing. Use whisk or mixer to mix all ingredients until smooth.
  3. Assemble salad with a handful or two of arugula, crispy chickpeas, dressing to your preference, and the optional vegan cheese.
  4. Enjoy!
