A simple yet classic caesar salad that takes no time to make!
There are a million salad recipes out there and so many different ways to make a salad. However, this recipe was so delicious and simple. Really the main work is just roasting chickpeas and then mixing the dressing. I love this for an easy dinner that doesn’t take too much time or ingredients, but still has lots of flavor.
Ingredient details:
- Greens – I am on a huge arugula kick right now. This would also work with any other leafy green, but I really love arugula and it tastes great in this salad.
- Chickpeas – I just used two cans of chickpeas. They will be pan fried.
- Dressing – This dressing is made with tahini, oatmilk, dijon, and lots of seasonings and other flavors. It’s so good! I have played around a lot with different ways to make caesar dressing, and this one is a favorite.
- Vegan Cheese – I used So Delicious mozzarella cheese and Follow Your Heart permesan to add some cheesy goodness to this salad.
