My husband and I got together in 2014 and on our first date we went to a pizza place in the college town we lived in and had this incredible “spin dip”. It was super creamy, came in the pan it was cooked in, and had a charred, crispy top. We went there lots of times after but we never really tried any again once we left that town and especially not since we became vegan. I threw this recipe together on a whim, but it turned out AMAZING! I definitely would try this next time you need a good appetizer!
Ingredient details:
- Artichoke hearts – I used canned artichoke hearts for this. Fresh wouldn’t do well because it wouldn’t get cooked down enough in the oven.
- Fresh spinach – I see a lot of recipes that use frozen spinach but I really think frozen spinach is nasty. The fresh spinach worked really well in this recipe and cooked down perfectly without being overly mushy.
- Vegan cheese – I used So Delicious mozerella cheese. This is just too add extra cheesy flavor and texture on top of the cheese sauce.
- Vegan mayo – I think this finished up the flavor nicely. I tried it without and it wasn’t the same. You could also try vegan cream cheese and that would also taste really amazing!
- Homemade Cheese sauce – I have used this exact homemade cheese sauce on several different recipes. It also works great on pizza if you don’t want to use packaged cheese.
Recipe List
Ingredients:
15oz canned artichoke hearts
2 cups fresh spinach
6oz vegan mozzarella cheese
1/2 cup vegan mayo
2 tbsp corn starch
2 tbsp water
1 cup plant milk
1 tbsp nutritional yeast
1/4 tsp Italian seasoning
1/4 tsp salt
1/8 tsp crushed red pepper
Instructions:
- Preheat oven to 400°
- In a sauce pan, combine water and corn starch until the starch is disolved.
- Add milk, nutritional yeast, italian seasoning, salt, and crushed red pepper.
- Cook on low until it has thickened into a cheesy sauce. Remove from heat.
- In mixing bowl combine all ingredients including cheese sauce.
- Pour into a 6×6 baking dish and bake on 400° for 20 minutes and then broil on high for an additional 5 minutes (or until crispy).
- Serve and enjoy!
