Vegan Chili

A classic and cozy vegan chili for a cold day!

This is an ultra-easy recipe that I love to make on a workday. It’s one-pot, super cheap ingredients, it takes about 30 minutes to make, and it’s SO delicious! Honestly one of my favorite things to make on a cold day.

Recipe List

Ingredients:

1 yellow onion

6 cloves garlic

1 tbsp olive oil

1 cup quinoa

15oz black beans

15oz kidney beans

15oz corn

32oz crushed tomatoes

2 cups vegetable broth

1tbsp cumin

1/2 tsp chili powder

1/2 tsp paprika

1/2 tsp salt

1 avocado

cilantro

vegan sour cream

vegan cheese

Instructions:

  1. Dice onion and mince garlic.
  2. Heat olive oil in large pot and add garlic and onion once heated. Cook on medium heat until translucent.
  3. Add quinoa and broth and cook for 10 minutes
  4. Add black beans, kidney beans,corn, and seasonings. Continue to cook for 2-3 minutes.
  5. Add tomatoes. Cook for 10-15 minutes or until quinoa is cooked through.
  6. Serve with sliced avocado, dallop of sour cream, small handful of cheese, and a small bunch of cilantro.
  7. Enjoy!
