A classic and cozy vegan chili for a cold day!

This is an ultra-easy recipe that I love to make on a workday. It’s one-pot, super cheap ingredients, it takes about 30 minutes to make, and it’s SO delicious! Honestly one of my favorite things to make on a cold day.

Ingredients:
1 yellow onion
6 cloves garlic
1 tbsp olive oil
1 cup quinoa
15oz black beans
15oz kidney beans
15oz corn
32oz crushed tomatoes
2 cups vegetable broth
1tbsp cumin
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp salt
1 avocado
cilantro
vegan sour cream
vegan cheese
Instructions:
- Dice onion and mince garlic.
- Heat olive oil in large pot and add garlic and onion once heated. Cook on medium heat until translucent.
- Add quinoa and broth and cook for 10 minutes
- Add black beans, kidney beans,corn, and seasonings. Continue to cook for 2-3 minutes.
- Add tomatoes. Cook for 10-15 minutes or until quinoa is cooked through.
- Serve with sliced avocado, dallop of sour cream, small handful of cheese, and a small bunch of cilantro.
- Enjoy!
