Vegan Mansaf

The perfect recreation of one of my favorite Jordanian dishes!

Mansaf is a traditional meal served in Jordan that many refer to as the national dish of Jordan. It’s traditionally made with lamb covered in a dried yogurt sauce, over a bed of rice, and served with shrak or markook bread either underneath the dish or on the side. It’s incredibly delicious! Probably one of my favorite Jordanian experiences was going to a friend’s house and having this dish with her family.

Because of the yogurt and meat differences, to make it vegan I used Tofurky Chick’n and vegan yogurt. The texture is slightly different to be vegan, but the taste is exactly the same! Definitely recommend it if you are vegan and want to try new flavors!

Ingredient details:

  • Rice – I use a medium-grain rice for this recipe.
  • Onion – I used yellow onion, but white will be good as well.
  • Garlic – Fresh minced garlic is great in this recipe and adds extra flavor to the meat.
  • Tofurky – I love Tofurky’s chicken. It comes already seasoned well and tastes so good inthis recipe. I am a huge fan of mansaf, and this meat replacement did a good job of mimicking the traditional lamb flavor.
  • Plain Yogurt – Make sure you get a very muted flavor of yogurt. If you’re lucky enough to live near a whole foods or other health food store you may be able to find vegan greek style yogurt. The yogurt traditionally served with masnaf is very thick. If you feel like your vegan yogurt is too runny, try using some tapioca flour or corn starch to thicken it up quickly.
  • Bread – I used tortillas for my mansaf because I don’t have the resources to make my own traditional shrak and I can’t find any at any international markets near me. It works just as well, but I definitely missed the massive shrak that usually goes with this meal.
  • Herbs and seasonings: Salt, Za’atar, turmeric, parsley. I really recommend fresh parsley with this recipe. It adds even more flavor to your meat.

Recipe List

Ingredients:

2 cups rice

1/2 tsp turmeric

1 yellow onion

6 gloves garlic

8oz tofurky chick’n

1 tsp salt

1 tbsp za’atar

1-2 tbsp fresh parsley

1 cup plain vegan yogurt + 1/4 tsp salt and 1/4 tsp za’atar

Optional: Shrak bread or tortillas (if you don’t have access to making shrak/markook bread).

Instructions:

  1. Cook rice as instructed.
  2. Once rice is cooked, at turmeric and mix well.
  3. Chop onion and mince garlic.
  4. Heat frying pan or cast iron to medim heat.
  5. Add onion and garlic to pan and cook until translucent.
  6. Add tofurky, parsley, and seasonings and cook for 10 minutes on medium heat until meat is crispy.
  7. Mix yogurt and the additional salt & za’atar together.
  8. Serve meat on bed of rice and top with yogurt as desired and use shrak or tortillas to serve.
