Vegan Oatmeal Cookies

Vegan Oatmeal Cookies

The perfect winter cookie!

Okay, first of all…. these have raisins in them. If you’re raisin-adverse, please copy this recipe and put it in Word, and see the word replacer to change “raisin” to “chocolate chip”… or try raisins and realize they are AMAZING when paired with oatmeal.

Honestly, though, I love raisins and think the hatred for them is a weird trend similar to the 2011 obsession with the word “moist” or the 2014 uptick in the obsession with bacon. They aren’t the best on their own, but they are like mini-dates and super yummy in things like oatmeal or cookies. But nevertheless, you can always exchange the same measurements of chocolate for the raisins I’m using.

I made these during a snow day earlier this month and they were the perfect winter day treat! Highly recommend.

Ingredient details:

  • Vegan butter – I always use miyoko’s, but any other kind will do.
  • Apple sauce – I use unsweetened plain apple sauce. I got a bunch of the individual cups a while back as a failed attempt to get my toddler to eat more fruit, and now I just use them for all my recipes. lol
  • Sugar – I’ve said it before, but always use organic sugar so that it’s not filtered with animal ashes (if you’re in the US, where we live in a gross post-apacolyptic society of filtering our food through the ashes of slaughtered animals…..).
  • Maple syrup – While maple syrup is obviously vegan, I like getting organic maple syrup too. It’s not as procesed tasting and has a lot of rich flavor.
  • Cinnamon – This makes the cookies extra delicious and have more spice to them. Add a little bit of cardamom too if you’re feeling squirrely. You won’t regret it.
  • Vanilla – I like a quality vanilla so that there’s less of an alcohol flavor to it. I like Nielson-Massey vanilla. You can find it at whole foods.
  • Baking soda
  • Flour – I always use King Arthur, but any kind will do. I’ve tried this with 1:1 gluten free flour and it’s just as good!
  • Oats – Make sure you get old fashioned oats, not the quick kind. I like them chewy, but with a bit of crunch and texture.
  • Raisins – Any kind will do!
