I love spending time in the kitchen, but right after the Holidays I love making dishes that are simple and require little prep or cooking time. This one is so simple and probably my favorite veggie bake I’ve made so far. It’s really delicious on it’s own, but would also be great with quinoa or rice. Give this one a try next time you’re looking for something simple to make!
Ingredient details:
- Sweet potato – I used a medium/large sweet potato for this recipe. I didn’t peal the potato, but just diced into small slices. I found it added some sweetness to the savory meal.
- Broccoli – I love fresh broccoli. I would not recommend frozen for this dish because you won’t get the crunchiness you want from the oven.
- Cauliflower – Cauliflower is another flavor favorite and I find it has almost a spicy flavor when you add a little bit of pepper to it.
- Baby carrots – Carrots are another veggie I love and they add a nice savory/sweet flavor to the dish.
- Olive oil – I like adding olive oil to a veggie bake because it adds some flavor and helps the veggies crisp up on the edges a bit.
- Seasonings: salt, pepper, cumin, Italian seasoning or za’atar. I LOVE both Italian seasoning and za’atar. It’s really whichever you prefer, but I used za’atar in this recipe and loved the added flavor it gave to the veggies.

Ingredients:
1 sweet potato
1 head of broccoli
1 head of cauliflower
1 cups baby carrots
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1tsp cumin
1 tbsp Italian seasoning or za’atar seasoning.
Instructions:
- Preheat oven to 400°
- Chop cauliflower and broccoli into small florets.
- Dice sweet potato into 1/2in. pieces.
- Spread all vegetables over a sheet pan and drizzle oil over the pan evenly.
- Add spices over the veggies and toss lightly before baking.
- Bake on 400° for 25 minutes.
- Serve and enjoy!
