I love gnocchi so much. I could eat it all the time. I also am a sucker for anything that reminds me of fall. I feel like there’s such a limited time that society allows us to eat squash, but I honestly like to cook with it throughout the year. I love the sweet and savory aspect of the sausage and the butternut squash sauce as well.
Ingredient details:
- Gnocchi – I used Kroger’s private selection gnocchi. Most gnocchi’s,
- Butternut Squash – I used a fresh squash and baked and pureed it. If you want to skip this step, you can use frozen and it should still work.
- Beyond sausage – I used Beyond’s brat sausage for this one. I really like it for most sausage dishes when you want sliced pieces of sausage.
- Plant milk – I always use oatmilk, but any kind will do. This helps turn the sauce into a more creamy mixture and make it less thick.
- Vegetable broth – I like adding some vegetable broth in too to give it more of a savory flavor and break down the sweatness of the squash even more.
- Garlic – You can just leave the cloves whole after peeling. You will puree them in the sauce so it doesn’t matter too much.
- Onion – I used a yellow onion for this one. You want onion flavor, but too strong will be overpowering in the sauce.
- Seasonings: Italian seasoning, pepper, salt, crushed red pepper.

Ingredients:
16oz gnocchi
1 medium butternut squash
16oz Beyond sausage
2 cups milk
1 cup vegetable broth
1 yellow onion
6 cloves garlic
1tbsp Italian seasoning
1tsp salt
1/2 tsp crushed red pepper
1/2 tsp pepper
Instructions:
- Preheat oven to 350°.
- Cut butternut squash in half and bake for 30 minutes.
- Chop onion and cook in pan on medium heat until translucent.
- Add sliced beyond sausage and stir occasionally until fully cooked.
- On a seperate pan, spread gnocchi and pan fry until fully cooked (about 10 minutes).
- Once the squash is done, drop ingredients into a blender along with peeled garlic, milk, broth, and seasonings. Blend until smooth.
- Combine sauce, gnocchi, and sausage and cook together for an additional 5 minutes.
- Serve and enjoy!
