Vegan Tofu Salad

Vegan Tofu Salad

An easy lunch or dinner with a familiar flavor.

I used to love the chicken salad sandwiches at would make them frequently. I’ve been missing that flavor lately and wanted to give it a try with tofu. It was so good and honestly really easy to make! It tasted amazing on bread and also really good as a dip.

Ingredient details:

  • Firm tofu – Try to get either firm or extra firm tofu so that it isn’t too mushy. I’ve also seen people use chickpeas and that sounds pretty good too, but I wanted mine to be a bit softer. If you have an allergy to soy, try subbing with a can of chickpeas!
  • Vegan Mayo – I used Follow Your Heart vegan mayo, but most of the other vegan brands are just as good. I’m not sure why, but I think vegan mayo tastes SO much better than the “real thing”.
  • Celery – I used 4 celery stalks and chopped them into very thin slices.
  • Onion – I used a yellow onion, but white would be good too.
  • Salt and Pepper (to taste).
  • Bread
  • Optional: Crackers
