An easy lunch or dinner with a familiar flavor.
I used to love the chicken salad sandwiches at would make them frequently. I’ve been missing that flavor lately and wanted to give it a try with tofu. It was so good and honestly really easy to make! It tasted amazing on bread and also really good as a dip.

Ingredient details:
- Firm tofu – Try to get either firm or extra firm tofu so that it isn’t too mushy. I’ve also seen people use chickpeas and that sounds pretty good too, but I wanted mine to be a bit softer. If you have an allergy to soy, try subbing with a can of chickpeas!
- Vegan Mayo – I used Follow Your Heart vegan mayo, but most of the other vegan brands are just as good. I’m not sure why, but I think vegan mayo tastes SO much better than the “real thing”.
- Celery – I used 4 celery stalks and chopped them into very thin slices.
- Onion – I used a yellow onion, but white would be good too.
- Salt and Pepper (to taste).

- Optional: Crackers

Serves: ~ 8 sandwiches
Ingredients:
16oz firm tofu
1 cup vegan mayo
4 celery stalks
1 onion
Salt & pepper to taste
Bread
Instructions:
- Press tofu and cut into small 1/2 inch cubes.
- Slice celery into thin slices. Dice onion.
- In mixing bowl, measure out mayo and combine with veggies and seasonings.
- Pour in cubed tofu and mix gently until all ingredients are combined.
- Add to sandwich or serve as dip.
- Optional: toast bread for 5 minutes before serving.
