I used to live in Amman, Jordan and my flat was directly across from a little bakery. It was MAGIC. I would wake up every morning smelling the freshly baked bread and would go over there a couple of times a week. Unlike overpriced shops here in the US, specialty bread there was about a quarter in US dollars. I’m so nostalgic for za’atar spice and this delicious flatbread. Try this manaqish recipe the next time you want an appetizer or snack!
Ingredient details:
- Yeast – I just use rapid rise active dry yeast packets.
- Water – Make sure it’s warm so it helps the dough rise more easily.
- Flour – I always use King Arthur.
- Za’atar – You can find this spice in most grocery stores or international markets.
- Olive oil – This is to drizzle on top of the dough before you sprinkle the za’atar on.
- Optional: Vegan Cheese – I topped a few of the flatbreads with violife cheese. This is totally optional, but tasted amazing. I would also like to try a ricotta mixture sometime.
- Other optional toppings: Tomatoes, spinach, vegan feta, parsley, etc.
Recipe List
Ingredients:
1 tbsp active dry yeast
1 1/2 cups water
3 cups flour
1/4 cup za’atar
1/2 cup vegan cheese
1 tbsp olive oil
Instructions:
- Heat oven to 425°
- Mix yeast and water and swirl.
- Add flour and mix together – add more flour if dough is too sticky.
- Kneed together for at least 3 minutes and cover for 10 minutes.
- Once dough has risen, split into four pieces and stretch out into flatbread shapes. Evenly sprinkle za’atar and other toppings over the dough.
- Drizzle olive oil on top.
- Bake on 425° for 15 minutes.
- Serve with hummus or vegan yogurt and enjoy!
