A veggie-packed pizza that everyone will love!

My son is such a picky eater and even he loved this pizza. It’s so delicious and packed with mushrooms and other delicious toppings! I’m a devoted cheese pizza fan, and I thought this was incredible. Maybe it’s because I have an obsession with mushrooms? Not sure, but this one was worth sacrificing a cheese pizza night.
Ingredient details:
- Yeast – I use Fleischmann’s Rapid Rise yeast for this dough.
- Water – Get the water very warm before mixing with the yeast. Your dough will be extra happy!
- Flour – I always use King Arthur.
- Onion – I used a yellow onion and cut it in long slices.
- Garlic – I used 6 cloves for this recipe. I definitely have a “more the merrier” mentality when it comes to garlic.
- Vegan Cheese – I used some cheddar and mozzerella for the topping. I feel like the flavor combination adds some dimension and color to the pizza.
- Olives – I just used canned olives. I accidently got whole, but it doesn’t matter much what you get because I still chopped them up a bit into small pieces.
- Mushrooms – I used baby bella mushrooms.
- Green Bell peppers – These are a surprising neccessity to a good surpreme pizza, in my opinion. I tried it without them and it wasn’t the same.
- Tomato paste – This is for the base of the sauce. I find if you use this with some added water and seasonings that it tastes way better than store bought pizza sauce.
- Seasonings: Italian seasoning, Salt, Crushed Red Pepper.

Ingredients:
1 tbsp active dry yeast
1 1/2 cups water
3 cups flour
1/2 red Onion
6 cloves garlic
1/2 cup chopped olives
1 cup baby bella mushrooms
1/2 green bell pepper
6oz tomato paste
6oz vegan cheese
1 tsp olive oil
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp crushed red pepper
*Optional: Semolina flour for crust.
Instructions:
- Heat oven to 450°
- Mix yeast and water and swirl.
- Add flour and mix together – add more flour if dough is too sticky.
- Kneed together for at least 3 minutes and cover for 10-20 minutes.
- Chop onion, olives, green peppers, and mince garlic.
- In small bowl combine tomato paste and seasonings.Add some warm water (about 1/4 cup) and mix until it forms a sauce.
- Using a piece of parchment papper, tretch out the dough into the size of your pizza stone. Use semolina flour underneath if you want additional crunch.
- Add 3-4 spoonfuls of sauce and spread out on each pizza.
- Top with veggies and vegan cheese (add as much as you like!).
- Bake in oven on 450° for 15 minutes. If you want a darker pizza and you’re using a standard oven, broil on high for 2-3 minutes before removing.
- Serve and enjoy!
