Vegan Fried Rice

I love fried rice and when I used to order Chinese I would always get fried rice instead of any entree. It’s just such a cheap and filling meal and tastes incredible. I’ve been playing around with how to make it exactly the way I like it, but I think I finally have it figured out!

Ingredient details:

  • Rice – I used a medium grain rice to get the right texture for the dish, but any rice will do for flavor!
  • Firm tofu – Make sure you get firm or extra form for this recipe so that the tofu holds together once mixed with all the other ingredients.
  • Corn starch – This will help firm up the tofu and get rid of any extra moisture.
  • Just Egg – Just egg is my favorite! It’s so easy to make and has amazing flavor. A work of genius. It tastes amazing in this dish!
  • Mixed veggies – I just used frozen mixed veggies since those are what you usually find in classic Chinese restaurant fried rice here in the US.
  • Yellow onion – Roughly dice this so you get large chunks. The flavor of the onion really comes through with this dish.
  • Garlic cloves
  • Coconut aminos & Soy sauce – A lot of people treat soy sauce and coconut aminos as interchangeable depending preferance or diet, but I actually really love the flavor combination and it works great in this dish!
  • Vegetable broth – Get low sodium.
  • Sriracha – You don’t need much. This adds a bit of heat and flavor to the dish. So good!
  • Salt & pepper to taste

Prep time: 5 minutes

Cook time: 40-45 minutes

Serves: 5

Ingredients:

2 cups rice

16oz firm tofu

2 tbsp corn starch

12oz Just Egg

10oz mixed veggies

1 yellow onion

6 garlic cloves

2 tbsp coconut aminos

2 tbsp soy sauce

1 cup vegetable broth

1 tbsp sriracha

salt & pepper to taste

Instructions:

  1. Set oven to 400°
  2. Cook 2 cups of rice with 4 cups of water on medium heat until fully steamed (about 10-15 minutes).
  3. Dice tofu and toss in corn starch until fully covered.
  4. Spread out on a lined baking sheet and bake for 20 minutes on 400°.
  5. Cook bottle of Just Egg until cooked through. Set aside.
  6. Dice onion and mince garlic.
  7. In wok or large pot, cook onion and garlic for 5 minutes on medium heat.
  8. Add mixed veggies and conitnue cooking on low.
  9. Once rice is done, add to wok and mix well.
  10. Toss in just egg and tofu and mix well until everything is even.
  11. Add broth, soy sauce, coconut aminos, sriracha, and salt/pepper.
  12. Continue to simmer incredients for an additional 5-10 minutes, or until ready to serve.
