The most deliciously cheesy and savory mushroom “steak” sandwich you will ever have!

I love a good steak and cheese sandwich. It’s actually a little ironic that I made this sandwich because I used to order a steak and cheese from a shop near my old apartment and would explicitly say no mushrooms. I absolutely hated them before I became vegan and developed a taste for good food. The mushrooms work perfectly in this sandwich and will develop a good crunch once out of the oven. Enjoy this one!
Ingredient details:
- Vegan sub bread – I had to search my groceries bakery section until I found one, but I live in a small town. Most stores should have sub buns that should be vegan. Just carefully read the label.
- Mushrooms – I used portabella mushrooms because they have a great steak texture and mimic the flavor very well.
- Onion – I used yellow onions, but white would work as well.
- Garlic – I used 8 cloves for this, but you be the judge for yourself!
- Seasonings – salt, italian seasoning, chili powder, paprika, coriander.
- Olive oil
- Plant Milk – I always use oatmilk, but any plant milk will do. This will be for the cheese sauce.
- Vegan Cheese – I used So Delicious mozzarella.
- Flour – I used King Arthur. This is just for the roux before you make the cheese sauce, so you can use gluten free as well if you are trying to stay gluten free.
- Vegan Butter – I used Miyoko’s, but any kind will do. This is just for the second part of the roux.
Detailed Instructions:
The recipe can be broken up into three sections: the steak, the cheese, and the assembly.
For the steak, you will chop the mushrooms into steak strips, chop the onion into strips as well, mince the garlic, and toss in a bowl with the olive oil and seasonings. Then place on a baking pan and bake on 400° for 20 minutes.
For the cheese, make your roux by melting the butter in a sauce pan on medium heat. Then add the flour and stir well until it is dissolved into the butter. Slowly pour in the milk in incremental bits, stirring well in between. Lastly, add the cheese and continue stirring until it becomes a sauce. Remove from heat.
For the assembly, just scoop the mushroom mixture equally onto the sub bun and pour cheese overtop. Place back on the baking sheet and bake for an additional 10 minutes on 400°.

8oz portabella mushrooms
1 yellow onion
8 cloves garlic
1 tsp salt
1 tsp Italian seasoning
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp coriander
1 tbsp olive oil
1 cup plant milk
8oz vegan mozzarella
1 tbsp flour
1tbsp vegan butter
Instructions:
- Set oven to 400°
- Chop the mushrooms into steak strips.
- Slice the onion into strips as well.
- Mince the garlic.
- In a large bowl, toss the mushroom, onion, and garlic in the olive oil and seasonings.
- Pour the mushroom mixture onto a baking pan.
- Bake on 400° for 20 minutes.
- In a small sauce pan, melt the butter.
- Add flour and stir until it forms a thick paste.
- Slowly pour in the milk incrementally, stirring while pouring.
- Add the mozzarella and continue stirring unitl it has melted, forming a cheese sauce.
- Asemble the sandwich by distributing the mushroom mixture onto the sub buns and pouring cheese sauce over top.
- Bake on 400° for 10 minutes.
- Serve and enjoy!
