I feel like we can all agree that mashed potatoes have been too sad and dry for too long. It’s like a dish we keep making for holidays but almost never actually enjoy.
Long before I was vegan I had the BEST mashed potatoes at a restaurant and they were so creamy, fluffy, and flavorful. I worked on recreating it for a while but never felt really happy about them until I made them with vegan ingredients. Please try these super easy mashed potatoes!

Ingredients:
3lbs red potatoes
1/2 cup vegan butter
2 tsp salt
pepper to taste
5 cloves garlic
1 1/2 cups oatmilk
1 tbsp coconut oil
1 tbsp olive oil
Instructions:
- Boil potatoes for 60 minutes until incredibly soft. *peel first if you don’t want skins*
- Mince garlic.
- Pour out water and add butter, seasonings, milk, oils, and minced garlic.
- Mash well.
- Whip with a whisk or hand mixer for 3 minutes to cream ingredients together more thoroughly.
- Et viola! Serve!
