Vegan Breakfast Sandwich

This is the breakfast sandwich of dreams. Like a sausage, egg, and cheese breakfast sandwiches but sooo much better vegan.

I’ve always been obsessed with breakfast sandwiches. I worked at a fast-food restaurant in high school and often worked in the morning. For breaks, I could get a free item and always chose the sausage, egg, and cheese (SEC!) biscuit. I also used to love the breakfast sandwich from Starbucks but they absolutely refuse to remove the egg and cheese from their impossible meat sandwich (what is the point?).

Long story short: I never even tried as a non-vegan to make this sandwich from home. But I have fallen in love with this super simple recipe for a breakfast sandwich. It is incredibly easy, delicious, and a perfect breakfast on the weekend!

Ingredients list:

  • Bread. I used both everything bagels and sourdough to compare the flavors. They were both amazing! If you want more of a bread sandwich, go with the sourdough. The bagels add a really great flavor to the sandwich.
  • Just Egg. This is just the BEST vegan egg replacement for a scrampled egg. I love it and, unlike what Creed from The Office said, the mung beans that make up the main ingredient in Just Egg do NOT smell like mungbeans. This is basically where all the prep comes from and you will need about 10 minutes to cook the eggs on a pan and make sure they are fluffy.
  • Hummus. That’s right. The thing I believe is missing from most breakfast sandwiches is hummus! It’s sooo good as a spread before you add the other ingredients and adds extra moisture to your bread. Highly recommend. I love to use the classic hummus from target’s brand. It has a lemony flavor and goes really well with all the other flavors in the sandwich.
  • Black bean burger. Morning star has a great black bean burger, but there are plenty of other options.

Serves: 4

Prep time: 2-5 minutes

Cook time: 20 minutes

Total time: 25-30 minutes

Ingredients:

  • 2 bagels
  • 4 slices sourdough bread
  • 4 blackbean burger patties
  • 1 bottle of Just Egg
  • hummus (to spread thinly on each slice of bread or bagel).
  • 4 slices chao cheese.

Instructions:

  1. Set oven to 350°.
  2. Cook Just Egg on a frying pan on medium heat. Stir and flip until cooked through and fluffy. Divide into 4 pieced.
  3. Spread hummus on each slice of bread or bagel.
  4. Place blackbean burger on one slice and Just Egg topped with cheese on the other slice.
  5. Bake open faced for 10 minutes.
  6. Bring sandwich together and bake for another 3 minutes.
  7. Take out of oven, cool, and enjoy!
