The best pancakes ever!

Ok. I can’t tell you how much I love this recipe. They are so fluffy and have perfectly crispy edges. I made it with chocolate chips this time, but I’ve made them with blueberries, pumpkin, and also plain before. It’s so good and the chia seeds (egg replacement) add amazing flavor, texture, and fiber to the recipe! Please try these!
Ingredients Description:
- Flour – I always use King Arthur flour. If you want to make these gluten free I would try Bob’s Red Mill 1-to-1 gluten free flour. Either turn out great!
- Oatmilk – You can really use any plant milk, but oatmilk is my all time favorite and adds the creaminess. It just tastes the best in my opinion too.
- Apple Cider Vinegar – This will be used to turn the milk into a “buttermilk”. You mix the milk and vinegar together and let it sit. After 10 minutes it sours the milk exactly like how buttermilk tastes (shout out to those of you who were unfortunate enough to ever taste plain buttermilk).
- Vegan Butter – I always like to use Miyoko’s Creamery, but any vegan plant butter will do.
- Organic Sugar – Make sure it’s organic and vegan approved. Most organic sugars are vegan. If it’s not organic and you live in the US the sugar will almost definitely have been filtered through animal bones. Yuckkkkkk. I usually buy Wholesome Sugar, or the Whole Foods brand.
- Baking Powder
- Baking Soda
- Vanilla
- Chia Seeds – This is an amazing egg replacer. Chia seeds are known for making great puddings, but also work really well as an egg replacer. Let it sit in the better for a little while to get jellylike before you cook.
- Vegan Chocolate Chips – Once again, make sure you check the label. I currently like using Enjoy Life.
Detailed Directions:
- Combine milk and apple cider vinegar – Mix these in a small bowl and swirl together. Let it sit for 10 minutes to transform it into “buttermilk”.
- Add chia seeds – Add the chia seeds and swirl again. Let it sit for a moment.
- Mix in sugar , vanilla, and melted butter – This will get all the wet ingredients combined and ready to be poured
- Pour into dry ingredients – In a larger mixing bowl combine the flour, baking powder, and baking soda. Pour in wet ingredients and stir until everything is miced together in a medium thick batter.
- Fold in chocolate chips – Gently fold in the chocolate chips until they are mixed in evenly with the batter.
- Cooking process – Heat a frying pan on medium heat for 5 minutes before pouring in any batter. Grease with a small amount of butter once the pan is hot enough. Cook for 3 minutes on each side, or until crispy and brown.

1 1/2 cups oatmilk
1 tbsp apple cider vinegar
1 tbsp organic sugar
1 tbsp vegan butter
1 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1 tbsp chia seeds
1/2 cup chocolate chips
Directions:
- Combine milk and apple cider vinegar. Rest for 10 minutes.
- Add chia seeds.
- Mix in sugar , vanilla, and melted butter
- Pour into dry ingredients. Mix well.
- Slowly fold in chocolate chips.
- Cook each pancake on medium heat, flipping after 2-3 minutes, until each side is golden brown.
